EXTRACTION
The first step in the oil extraction process is cleaning the olives and removing the stems, leaves, twigs, and other debris left with the olives. After that, we start the oil extraction through 3 phases: crushing, malaxation, extraction. The extraction is made with a decanter, closed and easy to clean. The two elements of this liquid, a murky substance called pomace and excess water are removed to leave a beautifully clear green oil. Before bottling, the oil is kept in stainless steel tanks closed to avoid any contact with air, oxygen and light. At the last stage the oil slightly filtered, to achieve it clearer, fragrant with a better age potential.
TASTING NOTES
Attractively harmonious, elegant nose, with fruity aromas with nuances of crisp garden vegetables. Flavours are wonderful balanced with an extraordinary purity.
