Vilmart & Cie looks back at a long history of grape growing and winemaking. It was founded as récoltant manipulant house in 1890 by Désiré Vilmart, in the village of Rilly-la-Montagne. Today, Laurent Champs, the fifth generation of the family, oversees the domaine. The grapes, sourced from a Premier Cru site, Rilly-La-Montagne which is situated in the western end of the Grand Montagne. Laurent farms 10 parcels over 11 hectares, an anomaly as most estates have many small parcels. This allows Laurent to farm with organic methods; his father practiced biodynamic viticulture and Laurent continues in this vein. All fermentation and aging is done in oak: large 2200-5500-liter foudres and demi-muid for the NV wines and smaller barrique as well as demi-muid for vintage wines. Malolactic fermentation is always blocked, giving the wines a crisp acidic structure coupled with the richness of the fermentation and aging regimen. Vilmart’s wines are at once ripe and structured, perfectly walking the line between hedonism and austerity, expertly balanced, and always exceptional.

The pale lemon shade with golden and green highlights is shimmering and luminous. This wine develops a fine, elegant and long-tasting mousse. On the first nose, the wine reveals white flower aromas (honeysuckle, lilac), citrus notes as well as fresh butter andcream. After airing, as it is getting warmer, this Champagne exhales another spectrum of aromas. The wine reveals spicy notes of ginger, lemongrass, which were unsuspected until then. The beautiful quality of the acidity (presentthroughout the tasting) is especially remarkable. The frank vinosity of the wine (roundness and alcohol) gives an impression of strength and freshness. The wine appears both broad yet tight. These various sensations produce apure, creamy and silky textured wine. The finish is clean, slightly mineral and long. The last aroma is the grapefruit. The impression will be remembered as a harmonious, healthy and vibrant wine

The Vilmart NV Grande Reserve represents a blend of relatively young vines of Chardonnay with around 70% Pinot Noir. It displays a surprising degree of lees autolysis on the nose, joined by smoky and chalky nuances that come out more emphatically on the silken, finely effervescent palate.
